Villa S.Andrea has two ancient cellars, probably built around 1000 AD, with stones obtained from the surrounding countryside. They are ideal for the aging of wines which takes place in French oak barrels of 35 hectoliters and in barriques, also of French oak.
The winery was built more recently and consists of 24 cement tanks for a total capacity of 5,000 hectoliters.
After the grapes have been transferred to destemmer-pressing machines, the must vinification is in red, with medium-long macerations. The racking follows the execution of the cuts or blends between the different varieties, with the subsequent transfer to wood barrels for aging.
Production can reach up to 260,000 bottles, which is approximately 2,000 hectoliters.
The visit to the cellars is about one hour and allows you to explore how a Tuscan wine is created (Denominazioni di Origine Toscane) from the processing techniques in the vineyards to the various stages of wine production, from winemaking to refinement.
At the end of the visit a wine tasting is offered, and, on request, it can be accompanied by a buffet of typical food products.
