Vin Santo is a sweet wine typical of Tuscany, made from Malvasia and Trebbiano grapes. It is one of the region’s finest products, crafted with passion and respect for tradition at our Val di Pesa Farm in San Casciano.
The grape clusters are harvested in crates that preserve the integrity of the fruit. The grapes are then left to dry naturally, concentrating their sugars and aromas in a slow, delicate process.
The must obtained from pressing undergoes slow fermentation in small wooden casks made of oak, cherry, and chestnut, where it develops complexity, roundness, and smoothness. This step is essential to giving our Vin Santo its unique character: a perfect balance between sweetness and freshness, with aromas ranging from fruity to spicy notes.
The result is a meditative wine that captivates with its elegance, enveloping taste, and remarkable ability to evolve over time—perfect for ending a meal in style or savoring during special moments.
Grapes: Malvasia Toscana and Trebbiano Toscano
Production Area: Production in-house
Soil: The vineyards producing this wine are located on hills at 250–300 meters above sea level, with excellent southern exposure, and set on soils rich in alberese and galestro. Yields per vine are low, averaging around 50 quintals per hectare.
Production Technique: The finest grapes, harvested at perfect ripeness, are carefully picked and placed in crates. They are then taken to the drying room, where they are laid out on mats to naturally wither, concentrating their sugars. After pressing, the must is aged in small casks (100 liters) for a period of 60 months. During this time, it develops all the aromatic and flavor characteristics that define this product. Finally, it undergoes a further 12 months of bottle aging.

Amber in color, with medium intensity.
Aroma
A distinctive, ethereal aroma of dried fruit, with great persistence.
Taste
Moderately sweet on the palate, very harmonious and well-balanced. With a highly distinctive aftertaste.
Serving Temperature
Serve at room temperature (17–18 °C).

Pairs well with traditional Tuscan dry pastries, lightly aged cheeses with jams, and honey.
